MANDALA KITCHENS CATERING

Beginning in March, 2016, we created a catering/food prep business to provide jobs for individuals (and also our Trainees & Graduates) as well as support the on-going funding of the training.

We have been able to offer part-time employment to individuals who are formerly homeless, formerly incarcerated, Veterans, undocumented individuals and political refugees.

We have catered events from 2 to 75 people—Home Meals, Meetings, Programs, Fund-raisers, Social Events

MENU

Vegetarian:

— Quinoa Corn Salad with lemon, scallion, and mint (vegan)

— Watermelon, mint and feta cheese Salad (optional addition of thinly sliced red onion)

— Roasted Beets with goat cheese and roasted pistachios (olive oil and lemon dressing)

— Mixed Baked Potato Wedges (vegan)

— Arugula Salad with cherry tomatoes, roasted almonds, and Parmesan with lemon-honey vinaigrette

— Zucchini Patties with feta, dill, parsley and scallion, served with sour cream

— Coleslaw (cabbage, carrot, celery seed, vinegar, mayo, yogurt)

— Sandwich Platter/Burger Bar (turkey, roast beef, ham, burgers [beef, turkey, veggie], assorted cheeses, lettuce, tomato, onion, mayo, mustard, whole wheat bread)

— Sabzi Khordan (Persian Platter): Feta cheese, Radish, Mint, Basil, Walnuts, served with pita or flatbread)
